The blend of a small quantity of Pinot Noir with Pinot Gris produces a surprisingly tasty rosé while the Auxerrois grape adds an interesting flavour to Pinot Blanc. Chardonnay is the best for single varietal wines: mineral, buttery with a hint of vanilla thanks to a brief exposure to oak. Small quantities of Riesling are sometimes added for the sparkling acidity produced by this grape.
